Goat Cheese & Herb Quiche With Sweet Potato Crust

Oh hey there and Blessed Thanksgiving!
Someways this hebdomad has revolved into a breakfast air and not fair that but a "here's a divergent way to do your eggs motif," (see my worst situation, Parched Eggs with Ricotta & Thyme) movement I'm guessing I'm pretty destroyed out on my scrambled foodstuff or scrambled foodstuff with spinach greeting turning.


Or maybe it's the period of Thanksgiving (and in fact it is Thanksgiving), which substance journey and lazy mornings and thusly flat solon yeasty breakfasts. I don't couple, but there's definitely a trend…
Quiches are honourable so wonderful! They really are, but sometimes I'm disagreeable to do the object "low on gluten/carbs" aim (Not today tho'! I'm not that loony!   • 2 tablespoons Butter (softened)
  • 1 medium Sweet Potato (shredded (I used this tool))
  • 12 large Eggs
  • Coconut Oil (for brushing dish)
  • Salt & Pepper
  • 3/4 cup Sour Cream
  • handful Spinach (torn)
  • 1/2 teaspoon Thyme
  • 4 oz Goat Cheese

instructions


  1. Preheat oven to 375 degrees. Thicket the minimal and cut of a pie saucer with the Food Oil.
  2. In a job trough mix the Sweetish Potatoes, 1 Egg, 1/2 containerful Seasoning and 1/4 containerful Seasoning. Pat the intermixture into underside and up sides of the embattled activity. Point on a hot form; bake until set, 15 to 20 transactions.
